Canfranc Express, the Michelin-starred restaurant at Canfranc Estación, a Royal Hideaway Hotel, has received a new gastronomic recognition: the 2024 Restaurant Revelation of the Year award from the Gastro & Cía Awards, which are given each year by the newspaper La Razón to the most outstanding chefs in Spanish
gastronomy. This award is a recognition of the contribution that Canfranc Express makes to the sector through its quality, innovation and passion for excellence.
Eduardo Salanova, chef at Canfranc Express and gastronomic advisor at Canfranc Estación, a
Royal Hideaway Hotel, has collected the award at this eighth edition of the awards, which was held at the
Museo del Traje in Madrid, along with 16 other local and internationally recognised professionals. Under the creative direction of its chef, the restaurant has managed to capture the essence of the local flavours of the Aragonese Pyrenees, elevating them with contemporary cooking techniques and impeccable presentation.

Canfranc Estación, a Royal Hideaway Hotel, prioritises Aragonese cuisine in its Canfranc Express restaurant, combining traditional Aragonese recipes with avant-garde creations. An exclusive gastronomic journey that speaks of the history of Canfranc International Station as a starting point, but which will take the traveller on an experience to new destinations through flavours and typical products of the region using avant-garde techniques, preserving at all times the essence of the best local cuisine.
A menu featuring autumnal flavours with strong roots in the land, such as the clarified consommé of
shepherd’s crumbs with spring onion and tomato seeds; the Guinea fowl and beetroot, with wild guinea fowl raised in Los Monegros; or the Ternasco Trilogy, a sequence of three courses in which Pyrenean lamb is the star, in homage to French cuisine and the historic past of the season as a point of union between Spain and the neighbouring country.
