荣获西班牙最佳火腿奖的特鲁埃尔火腿

农业、渔业和食品部昨天举行了第 36 届 西班牙食品奖颁奖典礼, 表彰了各个类别中最杰出的国家食品。总共 颁发了 23 个奖项,分为六个不同的领域。

在“最佳火腿”类别中  ,该类别专门颁发给塞拉诺火腿奖或其他公认的质量标志,该奖项授予了“ 完美火腿 ”,属于 DOP Jamón de Teruel 。这款产品由位于塞德里利亚斯 (特鲁埃尔) 的 Castelfrío Sociedad Anónima Laboral生产 ,以其出色的外观脱颖而出,脂肪分布均匀,肉色鲜红,使其成为 同类产品中的感官标杆。 

这款获奖火腿的特点是成熟均衡, 在海拔 1,364 米的塞德里拉斯山脉的理想环境中经过 30 多个月的腌制,纯净的冷空气有利于其自然加工。这款火腿口感甜美,略带鲜味,被认为是业内的珍品。在鸡尾酒会上, 与会者有机会品尝这款获奖火腿。 

另一方面,在伊比利亚类别中, 来自 Guijuelo(萨拉曼卡)的 Juan Manuel Hernández SA 也颁发了 “ Juan Manuel Gran selección 2020 ”奖,获奖原因是其细长的细甘蔗和均匀的质地。此外,其腌制和陈年的伊比利亚火腿的气味也受到好评,略带咸味和甜味,并带有浓郁的陈年味道。

本次评选共有 60 个样品 参加,其中塞拉诺火腿第一类 25 个,伊比利亚火腿第一类 35 个, 评定由加泰罗尼亚政府农业食品研究与技术研究所 (IRTA) 和埃斯特雷马杜拉大学动物源产品分析与创新服务中心 (SIPA) 协调的专家品尝师进行 。

西班牙食品奖创立于 1987 年, 旨在表彰在质量、创新和对西班牙美食的贡献方面表现突出的公司和产品。这一表彰是“世界上最富有的国家”活动的一部分,旨在巩固西班牙作为优质食品和美食强国的品牌。自 2016 年以来,最佳火腿奖每两年颁发一次,因此 2024 年的奖项是第五次。
